Brandy butter is the traditional British partner to Christmas pudding, made from just three ingredients. It is a hard sauce, which means the spirit is stirred in raw rather than cooked off, so the brandy taste stays sharp against the sweet butter. Made with fresh butter and kept covered in the fridge, it lasts for several weeks, so you can prepare it well ahead of the holidays.

Instructions

Put the butter and sugar in a bowl and beat them together until the mixture is pale, light and fluffy.

Beat in the brandy a little at a time, mixing well after each addition so the butter stays smooth and does not look split.

Cover the bowl and chill the brandy butter until it is cold and firm enough to hold its shape.

Serve it in spoonfuls alongside Christmas pudding and warm mince pies, so it softens and melts on contact.
