Brigadeiro is a Brazilian chocolate fudge candy made from just a few pantry ingredients in a single pot. It dates to the 1920s and takes its name from Eduardo Gomes, an air force officer whose rank was brigadeiro. The texture is up to you: stop cooking early for a spoonable fudge, or keep stirring for firm balls that hold their shape, rolled in sprinkles and served with coffee or milk.

Instructions

Combine the condensed milk, cocoa powder and butter in a heavy saucepan. Stir until the cocoa has dissolved into the milk.

Set the pan over low heat and stir constantly so no lumps form.

Keep stirring for 10 to 12 minutes. The mixture is ready when you can see the bottom of the pot for about a second after dragging the spoon across it. Cook it less for a soft, almost liquid fudge and longer for a firmer candy, and note that overcooking gives a hard candy.

Let the mixture cool until it is easy to handle.

Butter your hands and roll the mixture into balls about 2 cm across. If you prefer, shape them between two metal spoons. Roll each ball in the chocolate sprinkles until coated.
