Broccoli burgers swap beef for eggs and chopped vegetables, and they bake on one tray with no frying. Toasted almonds do the work of texture here, giving each patty a firm crunch against the soft broccoli and sharp red onion. Seasoned bread crumbs and a little water bind the mix, so the patties hold their shape when you turn them. Serve with mayonnaise and lettuce on a toasted bun.

Instructions

Beat the eggs in a mixing bowl until the yolks and whites are fully combined.

Stir in the chopped broccoli, almonds, red onion, bread crumbs and water until everything is evenly coated and the mixture holds together.

Season with salt and pepper to taste.

Oil a 30x38 cm (12x15-inch) baking sheet. Shape the mixture into 4 patties, each about 2 cm (¾ inch) thick, and set them on the sheet.

Bake in a 190 °C (375 °F) oven, turning the patties halfway through. They are done when both sides are golden brown, about 25 minutes in total.

Serve the patties on toasted buns or bread with mayonnaise and lettuce.
