Brown Butter Biscuits
Brown butter biscuits are a simple British biscuit that gets its character from one pan of foaming butter. Cooking the butter until it foams gives the dough a toasted, nutty note that plain melted butter cannot match. The dough needs only five ingredients and no creaming or chilling, and it comes together in about 30 minutes. It makes 20 biscuits, adapted from a Tesco magazine recipe.
Instructions
Heat the oven to 180 °C (356 °F) and line two baking sheets.
Melt the butter in a pan over medium heat for 3 to 5 minutes, until the surface turns foamy. Take it off the heat and let it cool for 5 minutes.
Whisk the sugar into the butter until it dissolves. Leave the mixture for 10 to 15 minutes, until it is only lukewarm, so it will not cook the egg.
Beat in the egg and the vanilla, then fold in the flour until no dry streaks remain and you have a soft dough.
Roll the dough into 20 balls and set them on the prepared baking sheets. Press each one flat with the back of a fork.
Bake for 12 to 14 minutes, until golden. Move the biscuits to a wire rack and let them cool completely.
