Browned Rice
Browned rice is a four-ingredient baked side that gets its color and savory depth from beef consommé instead of plain water. The rice cooks in the oven in a covered dish, so there is no pot to watch and no stirring once it goes in. Onion softened in margarine adds sweetness to the broth. It suits roast meat, baked chicken, or any plate that needs something to soak up gravy.
Instructions
Melt the margarine in a pan over medium heat and cook the chopped onion in it until it softens.
Put the uncooked rice and the beef consommé in a baking dish and stir them together. Pour the onion and all of the margarine over the top and mix again.
Cover the dish and bake it for 30 minutes at 350 °F (180 °C).
Take the dish out of the oven and stir in ½ can of water, using the empty consommé can to measure it.
Cover the dish again and return it to the oven for another 30 minutes, until the rice is tender and has absorbed the liquid.
