Bubble tea is a cold milk tea with chewy black tapioca pearls resting at the bottom of the glass. The drink began in Taiwan, and this home version needs only a cocktail shaker. The tea must be brewed very strong and chilled first, otherwise the milk and melting ice will water it down. Shaking gives a frothy top, and wide straws let the pearls come up with each sip.

Instructions

Spoon the cooked tapioca pearls into the bottom of a large glass.

Put the crushed ice, chilled black tea, milk and your sweetener into a cocktail shaker. Start with a little honey or sugar, since you can always add more after tasting.

Shake hard until the mixture turns frothy and the outside of the shaker feels cold. If you prefer a smooth drink with no foam, stir everything together in a jug instead.

Pour the tea over the pearls in the glass. Serve right away with wide straws, so the pearls can be pulled up with each sip.
