Butterbeer is a sweet, spiced apple drink built on vanilla ice cream and butter, named after the drink served in the Harry Potter books. Brown sugar, cinnamon and nutmeg give it a baked-apple flavor, while the butter and ice cream make it rich and creamy. It takes five minutes and one bowl, serves eight, and can be drunk cold or warmed in the mug.

Instructions

Put the softened ice cream and softened butter into a large bowl. Add the brown sugar, cinnamon and nutmeg.

Pour in the apple juice and stir until the mixture is smooth and no streaks of butter or ice cream remain.

Divide the mixture between eight mugs.

Serve the butterbeer cold, or warm it to the temperature you like before serving. For an adult version, stir a measure of rum or brandy into each mug.
