Cake Brownies
These cake brownies bake up lighter and softer than the dense kind, closer to a chocolate cake than a fudgy bar. The batter is made in a single bowl with a whisk and a spatula, and it needs only 4 tablespoons of cocoa and a short bake. You can stir in walnuts for crunch or leave them out, and the recipe makes about 20 pieces.
Instructions
Preheat the oven to 350°F (175°C). Grease a 9 x 9 inch (23 x 23 cm) square cake pan.
Whisk the eggs in a medium bowl until they look light.
Add the sugar, melted butter and cocoa, and mix well until the batter is evenly combined.
Add the flour, salt, baking powder, vanilla and nuts if you are using them. Mix well with a rubber spatula, scraping the sides of the bowl.
Pour the batter into the prepared pan and bake for 20 minutes at 350°F (175°C, Gas Mark 4).
Let the brownies cool in the pan before cutting them into squares.
