Camotes Enmielados (Mexican Sweet Yams)

Camotes enmielados is a Mexican home dessert of yams baked in a syrup made from piloncillo, the unrefined cane sugar sold in cones. The molasses in the sugar gives the sauce a deep caramel flavor with a slight bitter edge, and the cinnamon stays in the background as an accent. It takes four ingredients and very little work. Any dark unrefined sugar, such as muscovado or turbinado, can stand in for the piloncillo.
Instructions
Put the yam in a large baking dish, either whole or cut into thick slices. Peeling is optional.
Set the piloncillo cone on top of the yam. Pour in the water and add the cinnamon sticks.
Cover the dish and bake for about 60 minutes. Baste the yam with the sweetened cooking liquid as needed. The sauce should end up syrupy and very dark.
