Campfire Banana Boat

Campfire banana boat is a one-banana camping dessert that cooks in its own peel and needs no plate. The skin holds the melting chocolate chips and mini marshmallows in place while the fruit softens underneath. Mini marshmallows pack into the cavity more evenly than large ones, so every spoonful gets some of each. Wrap it in heavy duty foil, set it on the coals, and wash nothing afterward.

Instructions

Peel back a strip of skin about 1 ½ inches (4 cm) wide along the inside curve of the banana. Leave one end of the strip attached so it works as a lid.

Cut a wedge-shaped cavity out of the banana along its length and remove it.

Pack the cavity with mini marshmallows and chocolate chips.

Fold the strip of peel back into place and wrap the whole banana tightly in heavy duty foil.

Set the foil packet on the coals and leave it for about 5 minutes.

Open the foil with care, since steam and hot filling will be inside. Eat straight from the peel with a spoon, once the chocolate and marshmallows have softened.
