Candied Yams

Candied yams are a sweet, glossy side dish built from just five ingredients. The yams are boiled only halfway, then finish cooking in the oven, where they soak up a syrup of brown sugar and vanilla. Frequent basting is what builds the sticky glaze, so the cubes come out coated rather than sitting in a puddle. This is a classic American holiday table dish that needs little skill and very little shopping.
Instructions
Heat the oven to 350 °F (175 °C). Grease a baking dish and set it aside.
Boil the yams in their skins until they are about half cooked. They should give slightly when pierced but still feel firm in the center.
Drain the yams, peel off the skins, and cut the flesh into cubes. Spread the cubes in the greased baking dish and dot them with the margarine.
Put the brown sugar, water, and vanilla in a pot and boil them together to make a syrup. Pour the syrup over the yams.
Bake for 45 to 50 minutes, basting the yams often with the syrup in the dish. They are done when the cubes are tender and glazed.
