Cannabutter
Cannabutter is butter infused with cannabis, used as a base for homemade edibles. The method rests on one piece of chemistry: the active compounds dissolve readily into fat, while the green color and grassy flavor drift into the water. Simmering the butter over that water also acts as a temperature buffer, keeping the heat low enough that the psychoactive compounds do not vaporize. Any other fat, such as margarine or oil, can be treated the same way.
Instructions
Bring a saucepan holding a small amount of water to a boil.
Add the butter and the cannabis to the pan.
Simmer on a low heat for a few hours, topping up with water whenever too much has evaporated. Keep the temperature from rising above about 190°F.
Let the mixture cool. By now the oils and extracts from the cannabis have dissolved into the fat.
Strain out the cannabis solids, then chill the mixture in the refrigerator until the butter solidifies and the water separates from it. The finished butter should look slightly green and taste a little off from the cannabis.
Store the butter for up to 2 weeks in the fridge or up to 6 months in the freezer.
