Cannoli are Italian pastries made of a crisp fried tube filled with sweet ricotta cream. The filling here is simple: ricotta beaten with sugar, then lightened with whipped cream and studded with chocolate chips. Because the shells can be bought ready-made, the work is mostly mixing and piping. Chilling the filled pastries sets the cream, and dried fruit can stand in for the chocolate if you prefer.

Instructions

If you are making your own cannoli shells, prepare them first and let them cool completely. Store-bought shells can be used straight from the package.

Stir the ricotta and sugar together in a bowl until combined. Gently fold in the whipped cream, then the chocolate chips, so the mixture stays light.

Spoon the ricotta mixture into the shells, or pipe it in with a piping bag, which fills the tubes more evenly and with less mess. Fill from one end and then the other so the center is not left hollow.

Chill the filled cannoli in the refrigerator before serving, so the filling firms up and holds its shape when you bite in.
