Caprese salad is a plate of sliced tomato, mozzarella and basil, finished with olive oil and balsamic vinegar. The cheese should weigh about three quarters as much as the tomato, which keeps the tomato in charge. Pouring the oil and vinegar over the top without mixing them first leaves distinct sharp and rich notes on each bite. It takes minutes and needs no cooking, so it suits a ripe tomato.

Instructions

Cut the tomato into about 5 slices and lay them out on a plate. Slice the mozzarella so that you have roughly three quarters of the tomato's weight in cheese.

Place one slice of mozzarella on top of each tomato slice. Cut a horizontal slit halfway through each stack.

Tuck a basil leaf into each slit or lay it on top of the cheese. Sprinkle Italian seasoning, or a little oregano and pepper, over each stack if you want it.

Drizzle balsamic vinegar and olive oil over the slices, keeping the two separate rather than mixing them first. Serve right away while the tomato and basil are fresh.
