Carrot and Raisin Salad

Carrot and raisin salad is a two-person side that dresses shredded carrots with fresh citrus instead of mayonnaise. The juice and zest of both a lemon and an orange give it a clean, bright taste, while the raisins plump slightly in the dressing and add chewy sweetness. Honey or sugar is added only to taste, so you control the balance. It takes about half an hour and needs no cooking.
Instructions
Shred the carrots and put them in a mixing bowl with the raisins. Stir them together so the raisins are spread evenly through the carrot.
Zest the lemon and the orange with a fine grater. Add about 1 teaspoon of each zest to the bowl, then squeeze in the juice of both fruits.
Add a little sugar or honey, starting small and tasting as you go. Toss everything together well until the carrots are coated and the sweetness suits you.
Cover the bowl and chill it in the refrigerator. Serve the salad cold.
