Carrot Paprika Spread
Carrot paprika spread is a vegan sandwich filling built on tofu and oat flakes instead of cheese or nut butter. The oats soak up water and bind the tofu into a thick, even paste, while carrot, paprika and onion add sweetness and color. Mustard, catsup and garlic give it a savory edge. Everything is mashed in one bowl in about fifteen minutes, with no cooking required.
Instructions
Put the oat flakes and tofu in a bowl and work them together with a little water until you have a thick, spreadable base. If you want it to hold together more firmly, stir in some soy lecithin powder as an emulsifier.
Mash the carrot, paprika and onion until soft. You can leave some of them in small cut pieces instead if you like a chunkier spread.
Stir the vegetables into the base. Add a spoon of margarine, a spoon of rapeseed oil, or both, and mix until the fat is evenly worked in.
Season with mustard, catsup, garlic and pepper, tasting as you go. Soy sauce can be added too, and you can adjust the seasoning until it tastes the way you want.
