Cazuela Gallega is a single-serving baked casserole of eggs, ham, peas and Parmesan, shaped in a foil-lined bowl. The foil is the clever part: it lets you build the dish in layers, with ham lining the walls like a little cup, then lift it out whole and bake it freestanding. Ketchup and canned peas keep it quick and cheap, and the Parmesan crust finishes it. It suits breakfast or a light dinner.

Instructions

Press 3 sheets of aluminum foil, each about 15 x 15 inches (35 x 35 cm), into a bowl 5 inches (12 cm) across and 2 inches deep. Smooth the foil gently downward so it takes the shape of the bowl.

Spread the butter over the inside walls of the foil bowl. Lay one slice of ham in the bottom, then cut the second slice into three strips and use them to line the walls.

Crack both eggs into the bowl. Scatter the peas over the eggs, taking care not to break the yolks, and add 1 teaspoon of liquid from the can.

Season with a pinch of salt and spread the ketchup so it covers the whole surface.

Lift the foil with the casserole out of the bowl, and top it with the Parmesan. Bake for 30 minutes in an oven preheated to 400°F (205°C).
