Chadian Salad
Chadian salad is a raw vegetable salad dressed with nothing more than lemon juice and olive oil. The lemon does the work here: after half an hour in the refrigerator it softens the sliced red onion and draws juice from the tomatoes and cucumber, which becomes a light dressing of its own. The grated carrot adds sweetness and the bell pepper adds crunch. It suits grilled meat or fish well.
Instructions
Put the diced tomatoes, cucumber and bell pepper in a mixing bowl with the sliced red onion and grated carrot. Any color of bell pepper works.
In a small bowl, whisk the lemon juice with the olive oil, salt and pepper. Taste the dressing and add more salt or pepper if it needs it.
Pour the dressing over the vegetables and toss gently until every piece is lightly coated.
Cover the bowl with a lid or plastic wrap and chill it in the refrigerator for at least 30 minutes, so the vegetables take on the lemon and the flavors settle together.
Give the salad a last toss and move it to a serving dish. Scatter chopped parsley or mint over the top if you like.
Serve it on its own or alongside grilled meat or fish.
