Cheesecake Cups

Cheesecake cups give you a full cheesecake filling in a portion small enough to finish in one sitting. The chocolate chips go into the liners before the batter, so they melt during baking into a crisp chocolate base, with a few streaks rising into the filling. The batter takes only three ingredients, and the cups are dense and rich, so one is usually plenty.

Instructions

Heat your oven to 350°F (180°C). Put the cream cheese in a bowl and soften it in the microwave on a medium setting for about 30 seconds.

Add the eggs and sugar to the softened cream cheese and mix until the batter is combined.

Set paper liners into the cups of a cupcake pan. Scatter chocolate chips over the bottom of each liner, using less than a full layer so the paper still shows between the chips.

Spoon the cream cheese mixture into the liners, filling each one, and place the pan in the oven.

Bake for about 15 minutes. The chocolate melts into a base under each cake, and some of it bubbles up through the batter.

Take the pan out and let the cups cool for 20 minutes. They are ready when the chocolate on the bottom has hardened and turned crisp.

If you like, garnish the tops with chocolate melted in a double boiler.
