Cheese crisps are a savory, bite-sized cookie built from sharp cheddar, flour and a little cayenne. The puffed rice cereal is the clever part: it stays light inside the dough and gives each crisp a dry, crunchy bite that plain cheese pastry lacks. The dough comes together in one bowl with no rolling or cutting, and the fork-pressed rounds bake at a gentle 300°F, which suits a party tray.

Instructions

Heat the oven to 300°F (150°C). Leave the cookie sheet ungreased.

In a large bowl, work the softened margarine and the grated cheddar together until the two are blended into one mass.

Add the flour, salt and powdered cayenne pepper to the bowl and mix them into the cheese and margarine.

Stir in the puffed rice cereal and mix thoroughly, so the cereal is spread evenly through the dough.

Shape the dough into small balls and place them on the ungreased cookie sheet. Press each ball flat with a fork.

Bake at 300°F (150°C) for 20 minutes, then let the crisps cool a little before serving.
