Cheese on Toast
Cheese on toast is a two-ingredient snack that rewards a little attention to technique. Toasting the underside first and only warming the second side keeps the bread from going soggy under the cheese. A firm, strong cheese, grated so it melts evenly, browns well and holds its flavor under the broiler. Pickles, raw onion or walnuts add sharpness or crunch to the finished slice.
Instructions
Set the broiler to medium. Toast one side of the bread under it.
Turn the bread over and toast the second side only lightly, just enough to warm it through.
Spread the grated cheese over the warmed side and add whatever toppings you like, such as pickles, onion or walnuts.
Return the bread to the broiler, cheese side up, and cook until the cheese is bubbling and browned.
Eat it straight away, but take care, because the molten cheese can burn your tongue.
