Cheese Spread on French Bread
This make-ahead cheese spread pairs sharp cheddar and cream cheese with sage, Dijon mustard and a little apple juice. The juice adds a mild fruity sweetness that softens the sharpness of the cheddar, while the sage gives it an earthy, savory edge. Everything is mixed in one bowl and chilled for three hours, so the work is done well before guests arrive. Serve it on small slices of French bread.
Instructions
In a large bowl, mix the mustard, butter and dried sage together until they form a rough paste.
Add the apple juice, shredded cheddar and pepper, and stir well so the cheese is evenly coated.
Add the softened cream cheese and blend until the mixture is smooth and no white streaks remain.
Cover the bowl and refrigerate for 3 hours so the flavors settle and the spread firms up.
Take the bowl out of the refrigerator and let it stand for half an hour, until the spread is soft enough to spread easily.
Spread it on the small slices of French bread and serve with milk.
