This cheese tart pairs Brie with mascarpone in a sweet, buttery filling set inside a tender pastry shell. The crust is the dough from a Classic American Apple Pie, made with mascarpone in place of applejack, so the cream cheese flavor carries through every bite. The filling needs only a bowl and a fork, and the tart bakes in about 25 minutes, which makes it an easy one to attempt.

Instructions

Remove the rind from the Brie and mash the cheese in a bowl with the mascarpone, sugar, melted butter and salt until the mixture is combined. Set it aside while you prepare the crust.

Roll the dough out into a rough circle. Lay it in a 10-inch tart pan, press it into the pan to form a shell, and trim away the excess dough from the edges.

Spoon the cheese mixture into the tart shell. Bake at 425°F on the bottom of the oven for 15 minutes.

Move the tart to the bottom rack and bake for 10 minutes more.

Take the tart out of the oven and let it rest for 10 minutes before serving.
