Cherbet Mazhar is a chilled Algerian drink of orange blossom water, cinnamon and a little sugar. It comes from Algiers, where it is also called Cherbet Khotba, the proposal cherbet, because tradition reserves it for marriage proposals. The method is simple: warm everything in one pot, dissolve the sugar, and chill. The floral, lightly spiced result pairs naturally with quince jam or fresh seasonal fruit.

Instructions

Pour the water and the orange blossom water into a large saucepan and set it over medium heat. Stir with a wooden spoon.

Add the cinnamon powder and keep stirring until it has fully dissolved into the liquid.

Stir in the sugar, starting with 2 tablespoons and going up to 3 depending on how sweet you like it. Mix well and keep stirring until no grains of sugar remain.

Transfer the drink to a pitcher and chill it in the fridge until cold. Serve it with quince jam or seasonal fruit on the side.
