Chinese Chews (Nut and Date Bars)
Chinese chews are dense bar cookies that pack chopped dates, raisins and walnuts into a thin egg batter with very little flour. The result is a chewy square with a crisp, golden top and a sweet, fruity middle. The batter comes together in one bowl and needs no creaming or chilling. Cutting the slab while warm keeps the edges clean, and a roll in icing sugar finishes each bar.
Instructions
Heat the oven to 350°F (175°C) and grease an 8-inch cake pan. Beat the eggs in a large bowl until they look foamy, then stir in the sugar until combined.
Add the self-raising flour and salt and mix them in. Stir in the vanilla, followed by the chopped dates, raisins and walnuts, and mix well so the fruit and nuts are spread evenly through the batter.
Spread the mixture into the greased pan. Bake for about 30 to 35 minutes, until the top is golden brown.
Let the pan cool only briefly. While the slab is still warm, cut it into squares and roll each one in icing sugar. Serve as they are or with a scoop of ice cream, and note that the bars firm up as they cool.
