Chipotle BBQ Ribs
Chipotle BBQ ribs pair a smoky pepper rub with a sweet molasses glaze. The rub goes on at least an hour ahead, so the seasoning reaches the meat before the ribs ever see heat. Hickory smoke does the slow work for three to four hours while you baste, and a final sear over a hotter fire browns the sauce into a sticky crust. The mix of heat, smoke and dark sugar is the whole appeal.
Instructions
Coat the slab of spareribs all over with the chipotle BBQ rub. Refrigerate it for at least 1 hour so the seasoning sinks in.
Stir the chipotle BBQ sauce and the molasses together in a bowl. This is your basting mixture.
Set up a smoker, or a charcoal grill arranged for indirect heat, at 325 to 350°F. Add the hickory chunks so the fire gives off smoke.
Lay the ribs in the smoker or on the indirect side of the grill. Cook for 3 to 4 hours, brushing often with the molasses mixture so the surface builds up a glaze.
Brush the ribs with the remaining sauce and move them to a medium-high grill. Sear until the surface is well browned.
Rest the ribs for 15 minutes, then cut and serve.
