Chipotle BBQ Sauce
This chipotle BBQ sauce is smoky, dark and properly hot, and it starts with a roux. Cooking oil and flour to a pale blonde color gives the sauce body before the ketchup, molasses and soy go in. Both cans of chipotles in adobo go in whole, adobo included, so the heat is built into the base. Purée it smooth after a short simmer. Anyone who prefers less fire can adjust the chipotle to taste.
Instructions
Whisk the olive oil and flour together in a saucepan over medium heat. Keep stirring constantly until the paste turns a light blonde color.
Add the chipotles with all of their adobo sauce, the ketchup, molasses, Worcestershire sauce, soy sauce and cider vinegar. Bring the mixture to a boil.
Turn the heat down to low and let the sauce cook for 15 minutes.
Let it cool for 15 minutes, then purée it in batches until completely smooth.
Pour the sauce into a nonreactive container and keep it for up to 1 week.
