Chipotle Maple Glazed Pork Tenderloin

Chipotle Maple Glazed Pork Tenderloin is a quick-grilled cut finished with a sweet, smoky, slightly hot glaze. The pork spends a full day in a lime, honey and black pepper marinade, so the lean meat is seasoned all the way through before it hits the coals. A short sear over hot charcoal keeps it tender, and a rest in a foil pouch with minced chipotle and maple syrup lets the glaze soak in.

Instructions

Put the lime juice, garlic powder, salt, honey and pepper in a gallon-size zip-top bag. Add the trimmed pork, seal the bag and refrigerate it for 24 hours.

After 24 hours, take the pork out of the bag, drain off the marinade and set the meat aside.

Light 4 ½ pounds of natural chunk charcoal in a large chimney starter, following the directions that come with it. When the coals are hot, spread them evenly over the bottom of the grill, set the grate back in place and wipe it with a towel soaked in oil.

Put the pork on the hottest part of the grill and cook it for 1 ½ minutes. Turn it 90 degrees and cook for another 1 ½ minutes, then keep turning and cooking in the same way 12 times in all, or until the internal temperature reaches 140°F for medium rare.

While the pork cooks, stir the minced chipotle chiles and the maple syrup together in a bowl and set the glaze aside.

Shape a pouch from foil and put the cooked pork inside. Pour the chipotle and maple mixture over the meat, seal the pouch tightly and let it rest for 15 minutes. Serve the pork warm.
