Chivito (Uruguayan Beef Sandwich)

The chivito is Uruguay's signature sandwich, a tall stack of thin sliced beef, a fried egg and lettuce in a split loaf. The egg is cooked until the yolk is set, so the sandwich holds together and can be eaten in the hand. Sauces are optional and added to taste. Two traditional variations are worth knowing: the Canadiense, with slices of cured pork, and the plated al plato version.

Instructions

Split the loaf of bread lengthwise and keep it somewhere warm while you cook the filling.

Heat a frying pan until hot, add a little oil, and cook the thinly sliced beef. Season it with salt and pepper as it cooks.

Fry the egg in the same pan beside the beef, or in a second pan. Cook it until the yolk is firm all the way through and not runny.

Spread a little mayonnaise on both cut sides of the warm bread. Pile the beef on the bottom half, then add the fried egg, the lettuce leaves, and the tomato slices.

Add ketchup or mustard to taste, then close the sandwich with the other half of the loaf. Serve it while it is still hot.
