Choco-crunch bites are no-bake peanut butter balls that take about 15 minutes from bowl to plate. Sunflower seeds and puffed rice give the chewy mixture a real crunch, chopped raisins add small pockets of sweetness, and mini chocolate chips spread evenly through each ball. Peanut butter is the only binder, so firm pressing is the key technique. Roll them in powdered sugar for a soft finish or coconut for a toasty-looking one.

Instructions

Chop the raisins if they are not already in small pieces. Put the sunflower seeds, raisins, mini chocolate chips, puffed rice cereal and peanut butter in a large bowl, keeping the powdered sugar or coconut aside for later.

Stir everything together until the peanut butter coats the dry ingredients and the mixture holds together when pressed.

With clean hands, press the mixture firmly into balls about 1 inch across. Pressing hard matters, since there is no baking to set them and loose balls will crumble.

Roll each ball gently in the powdered sugar or the coconut until lightly coated. Use one coating for the whole batch or split it, as you like.

The recipe makes about 18 bites and needs no cooking. Cover any leftovers and keep them in the refrigerator.
