Chocolate Chip Balls

Chocolate chip balls are rolled, baked cookies made with a mix of all-purpose and oat flour. The oat flour gives the dough a slightly nutty, sturdy crumb that holds up to a heavy load of chocolate. Two kinds of chocolate go in, semi-sweet chips and grated milk chocolate, so the dough is streaked with fine shavings as well as chunks. Nuts are optional, and the recipe makes a large batch.

Instructions

Preheat the oven to 375°F (around 200°C).

In a large mixer bowl, cream the softened butter with both the white and brown sugars until combined. Beat in the eggs and vanilla extract.

Sift together the all-purpose flour, oat flour, salt, baking powder and baking soda. Add the dry mixture to the butter mixture and mix until a dough forms.

Stir in the chocolate chips, the grated milk chocolate and the nuts, if you are using them.

Roll the dough into balls and set them 2 inches apart on a cookie sheet. A pizza stone also works in place of the sheet.

Bake for 10 minutes, or until the balls are golden brown. Baking times vary between ovens, so check them near the end.

Let the balls stand on the sheet for about 1 minute, then move them to a plate or cooling sheet.
