Chocolate Chocolate Chip Muffins

These chocolate muffins double up on chocolate, with cocoa in the batter and chocolate chips folded through it. The batter is a simple one-bowl, two-stage mix that takes minutes to put together and bakes in 20 minutes, so a dozen can be ready on a weekday morning. Stirring only until the flour is moistened keeps the crumb tender. They taste best warm, when the chips are still soft.

Instructions

Heat the oven to 400°F (205°C). Put the flour, chocolate chips, sugar, cocoa, salt and baking powder in a large mixing bowl and stir them together, then make a well in the center.

Beat the egg in a small bowl, then stir in the milk, oil and vanilla. Pour this into the well in the dry ingredients.

Stir only until the flour is just moistened. A few lumps are fine, and overmixing will make the muffins tough.

Grease 12 muffin cups with cooking spray, or use paper liners if you have no spray. Spoon in the batter until each cup is about three quarters full.

Bake for 20 minutes. The muffins are done when a skewer pushed into the center of one comes out clean. Serve them while still warm.
