This homemade chocolate spread is a quick stovetop answer to the jar of hazelnut spread you usually buy. It builds its flavor from cocoa powder and 60% dark chocolate, so the result is properly chocolatey rather than just sweet. Raw tahini or natural peanut butter supplies the body and richness, which means you can pick the nut-free option or the peanut one depending on what is in your cupboard.

Instructions

Put the sugar, cocoa powder and salt in a saucepan and stir them together so the cocoa is evenly mixed in.

Pour in a small amount of the milk and stir it into a thick paste, then add the rest of the milk. Starting with a little keeps the cocoa from clumping.

Set the pan over the heat and stir often. Keep going until the sugar has dissolved into the milk and you can no longer feel any grains against the spoon.

Add the dark chocolate and stir until it has melted completely and the mixture looks smooth and glossy.

Take the pan off the heat and stir in the tahini or peanut butter. Mix well until the spread is uniform in color and texture.

Let the spread cool, then transfer it to a container and store it in the fridge.
