Chunky Guacamole
Chunky guacamole made with three ripe avocados, lime juice and fresh salsa takes about half an hour and needs no mashing. Dicing the avocado instead of crushing it leaves soft, buttery pieces that hold their shape against the salsa. Lime juice seasons the fruit and slows browning, and the salsa fresca supplies the onion, tomato and chile in a single ingredient. It serves six with chips or tacos.
Instructions
Peel the avocados, remove the pits and cut the flesh into chunky dice. Keep the pits if you plan to store the guacamole.
Put the diced avocado in a bowl and sprinkle the lime juice over it so every piece is lightly coated.
Add the salsa fresca and toss gently until everything is evenly mixed. Stop while the avocado is still in distinct chunks, since over-mixing will turn it into a paste.
Serve right away. If it has to wait, set an avocado pit in the bowl, cover the surface tightly with plastic wrap and refrigerate to slow the browning.
