Chupaqueso
Chupaqueso is a folded tube of fried cheese wrapped around more cheese and whatever toppings you like. The shell comes from cheddar cooked in a dry skillet until it turns rubbery and browned, so it holds together like a flatbread. The dish began in Howard Tayler's webcomic Schlock Mercenary, and it takes about ten minutes, so it makes a quick single serving.
Instructions
Get your toppings ready before you start, because the second half of this dish moves fast. Choose any combination of the bacon, cold cuts, peppers, mushrooms and marinara.
Scatter the shell cheese in an even layer across a medium-large non-stick or cast-iron skillet. It will melt and bubble, then slowly settle into a single sheet of cheese.
When the underside has turned orange or brown, flip the sheet over.
Sprinkle the filler cheese in a line down the middle, then lay your chosen toppings over it.
Fold the shell over the filling to form a tube. Let it cook a little longer if you want the filler cheese to melt through.
Serve it right away and eat it while it is hot.
