Classic Salad
This Romaine salad with sharp Cheddar and garlicky croutons is quick enough to make just before dinner. The key is the cheese: an extra-sharp Cheddar aged at least a year gives a crumbly, tangy bite that stands up to the sweet Honey Dijon dressing. Optional raisins add a chewy sweetness against the salt. There is no cooking, and it takes only a few minutes to assemble.
Instructions
Tear the Romaine leaves into small, bite-sized pieces and put them in a medium bowl.
Slice the tomato into small pieces and let them fall into the bowl on top of the lettuce. If you are using cherry or grape tomatoes, leave them whole and scatter them over the lettuce.
Sprinkle the crumbled Cheddar and the broken croutons over the salad. Add the raisins now if you want them.
Drizzle the Honey Dijon dressing over the top and serve right away, while the croutons are still crisp.
