Coffee Concentrate
Cold brew concentrate is a jar of strong coffee that waits in your refrigerator for up to three weeks. Soaking the grounds in mineral water overnight, with no heat and almost no stirring, gives a brew that is generally less acidic than coffee made the usual way. You decide the strength when you dilute it, one part concentrate to two or three parts water. A coffee and chicory blend also works well here.
Instructions
Put the ground coffee into a large jar.
Pour the mineral water over the grounds. Stir only enough to make sure every bit of coffee is wet.
Leave the mixture to stand for 10 to 12 hours. Overnight works best.
Line a sieve with cheesecloth and set it over a second jar. Pour the soaked coffee into the sieve and let the liquid run through while the grounds collect in the cloth.
Discard the grounds and keep the liquid, which is your concentrate, in the refrigerator. It will keep for 2 to 3 weeks.
To make a cup, mix the concentrate with water at a ratio of 1 part concentrate to 2 or 3 parts water, depending on how strong you like it.
