Coffee Rum Glazed Apples
Coffee Rum Glazed Apples are sautéed apple slices tossed in a glossy sauce of coffee, dark rum and coffee liqueur. Honeycrisp apples keep their shape in the hot pan, so the slices stay crisp at the center while the edges brown. Flaming the liqueurs burns off the harsh alcohol and lifts the browned bits from the skillet into the sauce. Reducing the coffee with butter and sugar gives a bittersweet glaze that suits a warm dessert.
Instructions
Melt 1 tablespoon of the butter in a stainless steel skillet over medium heat. Add the apple slices and sauté just until they are browned around the edges, then remove them from the pan and keep them warm.
Combine the rum and the coffee liqueur. Pour them into the empty pan, turn the heat off, and carefully ignite the alcohol. Once the flames die down, turn the heat back on, bring the liquid to a boil, and scrape up the browned bits from the bottom of the pan.
Add the coffee, sugar, salt and the remaining butter to the pan. Boil over medium heat until the sauce has reduced by about one third.
Return the apples to the pan and toss them until they are evenly coated in the glaze. Serve warm.
