Cola Cake
Cola Cake is a chocolate sheet cake that uses a cup of cola in the batter and more in the frosting. The cola is boiled with margarine and cocoa, then poured over the flour and sugar, which gives a thin batter that bakes up tender. Miniature marshmallows float to the surface and melt into the top as it bakes. The warm frosting is spread on while the cake is hot.
Instructions
Stir the flour and granulated sugar together in a large bowl.
Put the first measure of cola, the 2 sticks of margarine and the 3 tablespoons of cocoa in a saucepan. Bring it to a boil.
Pour the hot cola mixture over the flour and sugar and stir until no dry patches remain.
Beat the eggs and mix them in, then add the buttermilk, baking soda, vanilla extract and marshmallows. The batter will be thin, and the marshmallows will float to the top.
Pour the batter into a 9x13-inch (23x33 cm) pan and bake at 350 °F (177 °C) for 35 minutes. Start the frosting while the cake is still in the oven, since it needs to go on warm.
For the frosting, combine the 6 tablespoons of cola, 2 tablespoons of cocoa and 1 stick of margarine in a pan and bring to a boil.
Remove from the heat and mix in the vanilla, powdered sugar and the nuts if using. Stir until the frosting is smooth.
Spread the warm frosting over the cake while it is still warm from the oven.
