Cold Potatoes Fried
Cold Potatoes Fried is a way to turn leftover boiled potatoes into a hot side dish with nothing more than a pan and a little fat. Instructions
Put a spoonful of meat drippings in a frying pan and set it over the heat until the fat has melted and coats the base of the pan.
Add the sliced cold potatoes to the pan in a single layer if you can, so that each slice touches the fat.
Season the potatoes with a little salt and pepper, going lightly at first since you can always add more at the table.
Cook the potatoes, turning them now and then, until they are heated all the way through and hot to the touch.
Slide them onto a warm dish and serve straight away.
