Cream Cheese Mints
Cream cheese mints are a no-bake sweet made from only four ingredients. The cream cheese gives the dough a soft, slightly tangy centre that keeps the sugar from tasting flat, and a tiny measure of peppermint is enough to flavour the whole batch. Each ball gets rolled in granulated sugar for a light crunch, then pressed flat with a glass. They suit party platters and gift boxes.
Instructions
Put the softened cream cheese, icing sugar and peppermint flavouring in a large bowl. Stir until everything is combined into a smooth, workable dough.
Pinch off small pieces of the dough and roll each one into a small ball.
Roll each ball in the white granulated sugar until it is coated all over.
Set the balls on a tray and press each one with the bottom of a glass until it is flat.
Chill the mints until they are firm. Keep them in an airtight container.
