Creamy Mascarpone Dessert
This mascarpone dessert sets a rich, lightly sweetened cheese cream over a layer of chocolate syrup. The yolks are whisked over simmering water until they fall in ribbons, which thickens them and cooks them gently before they are folded into the cheese. Italian cooks often pair soft cheeses like mascarpone with just a little sugar, and this version follows that restraint. Crushed cookies and chocolate curls add some crunch on top.
Instructions
Whisk the egg yolks and sugar together in a stainless steel bowl until the mixture is light and creamy.
Set the bowl over a pot holding about 1 inch of simmering water, so it works as a double boiler. Whisk the yolks without stopping until they are warm, thick, and fall from the whisk in ribbons. Take the bowl off the heat and set it aside.
Fold the cooked yolks together with the mascarpone, heavy cream, and vanilla until the mixture is combined.
Pour a small amount of chocolate syrup into the bottom of a glass dish, then fill the dish with the cheese mixture.
Top with crushed vanilla cookies and chocolate curls, then refrigerate until you are ready to serve.
To serve, place a portion on each plate and smooth it into a small rectangle. Add a dollop of whipped cream on top and dust the whole thing with cocoa powder.
