Creme de Papaya
Creme de Papaya is a Brazilian dessert that takes five minutes and one blender. Ripe papaya gives the base a soft, sweet body, and a scoop of vanilla ice cream turns it into a thick, cold cream. A spoonful of blackcurrant liqueur adds a dark, tart edge that keeps it from tasting flat. For a version without alcohol, a blackcurrant syrup works in its place.
Instructions
Halve the papaya, scoop out the seeds, then peel it and cut the flesh into cubes. A spoon run between flesh and skin also works and is less messy than peeling the whole fruit.
Put the papaya cubes in a blender with the scoop of vanilla ice cream and most of the blackcurrant liqueur. Blend until the mixture is completely smooth and creamy.
Pour a little liqueur into the bottom of a dessert glass or small bowl, then add the blended papaya cream on top.
Finish with a swirl of the remaining liqueur over the surface. Add a sprig of mint if you like, and serve right away.
