Cucumber and Tomato Salad
This cucumber and tomato salad takes ten minutes and needs only five ingredients. The dressing is plain sunflower oil and salt, with no vinegar or lemon, so the vegetables taste of themselves and the oil lends a mild nuttiness. Small cubes of crisp pickling cucumber, ripe tomato and raw onion are all it takes. Make it just before eating, because the flavor fades within a few hours.
Instructions
Cut the cucumber and the tomato into small cubes, about ¼ inch on each side, so every forkful has a bit of each.
Peel the onion and chop it to a similar size.
Put the cucumber, tomato and onion together in a bowl large enough to toss them without spilling.
Pour in the sunflower oil and mix well until the vegetables are lightly coated.
Add the salt, stir again, then taste and add a little more if the salad needs it. Serve straight away.
