Cucumber Bits in Yogurt

Cucumber bits in yogurt is a cold side dish that takes five minutes and three ingredients. The cucumber stays crisp against the cool, tangy yogurt, and salt is the only seasoning, so the two main flavors come through plainly. Serve it next to anything rich or spicy, where its coolness works as a contrast, or eat it by the spoonful as a quick snack.

Instructions

Chop the cucumber into small pieces, roughly the size of a pea or a little larger so each spoonful has some crunch.

Put the chopped cucumber in a bowl and add the plain yogurt. Stir until the pieces are evenly coated.

Add salt a little at a time, stirring and tasting as you go, until the yogurt tastes lightly seasoned. Serve right away.
