Cypriot Salad (Χωριάτικη Σαλάτα)
Cypriot salad is the everyday village salad of Cyprus, called Χωριάτικη, and it is served alongside most meals on the island. It relies on a short list of fresh vegetables, salty feta and black olives, dressed only with olive oil and lemon juice. Dressing it just before serving keeps the lettuce crisp, and the whole bowl comes together in a few minutes with no cooking.
Instructions
Cut the tomato, cucumber and lettuce into bite-sized pieces. Slice the small onion.
Put the cut vegetables in a large bowl. Scatter the onion, the small pieces of feta and the black olives over the top, arranging them however you like.
Just before serving, pour the olive oil and lemon juice over the salad. Toss or shake the bowl so the dressing coats everything, and serve straight away.
