Date Nut Bars

Date Nut Bars are chewy, fruit-sweetened cookies made from ground dates and pecans held together with whipped egg whites. The batter uses only a cup of flour, so the nuts and dates carry most of the body. Folding the sugar mixture into stiff whites keeps the bars light rather than dense. A tart lemon and vanilla glaze, spread on while they are hot, cuts the richness of the dates.
Instructions
Grind the nuts and the seeded dates together, then sift the granulated sugar over them and mix. Set this bowl aside.
In a separate bowl, whip the egg whites until they hold stiff peaks. The salt from the ingredient list goes in with the whites.
Add the nut and date mixture to the whites a little at a time, whipping constantly. Fold in the cream once everything is combined.
Sift the flour, then sift it again with the baking powder. Fold this gently into the egg mixture until no dry flour shows.
Grease and flour a baking sheet. Pat the dough out on the sheet to a thickness of about ½ inch.
Bake for 10 minutes at 350°F (175°C).
While the bars bake, blend the confectioner's sugar with the lemon juice and vanilla extract until smooth.
Spread the glaze over the cookies while they are still hot, so it sets into a thin sweet coating as they cool.
