Deep Fried Chiles Stuffed with Potato (Mirchi Bada)

Mirchi bada is an Indian snack of green chiles stuffed with spiced mashed potato and fried in a gram flour coating. The potato filling, seasoned with chaat masala and fresh coriander, softens the heat of the chile once the seeds are removed. The besan batter fries up golden and crisp around the tender pepper. Serve the fritters hot, while the coating is still crunchy.
Instructions
Slit each chile lengthwise, scrape out the seeds, and set the chiles aside.
Boil the potatoes in salted water until soft. Peel them while still warm and mash them until no lumps remain.
Mix the red chile powder, chaat masala, chopped coriander leaves and salt into the mashed potato. Taste and adjust the seasoning.
Whisk the gram flour with turmeric, salt and enough water to make a thick batter that will cling to a chile rather than run off it.
Pack the potato mixture into each slit chile. Dip each stuffed chile in the batter and turn it until it is fully coated.
Fry the coated chiles in preheated oil until the batter is golden brown. Lift them out and serve.
