These grilled burgers carry their topping on top rather than inside the patty. Crumbled bacon, cheddar, mushrooms and mayonnaise are stirred into a spread that goes on during the last 3 minutes of grilling, so it melts into a savory crust over the meat. The mixture can be made ahead and kept cold, which suits a cookout. Each patty uses a quarter cup of it.

Instructions

Put the ground beef, garlic salt, chopped onion and pepper in a bowl and mix well with your hands until the seasonings are evenly spread through the meat.

Divide the mixture into 6 equal portions and shape each into a patty about ¾ inch thick.

In a separate bowl, stir together the crumbled bacon, shredded cheddar, mayonnaise and sliced mushrooms. Keep this topping in the refrigerator or a cooler until the burgers are on the grill.

Set the patties on the grill, cover it, and cook for 5 to 7 minutes on each side.

During the last 3 minutes of cooking, spoon about ¼ cup of the cheese mixture onto each burger so it warms through and softens. Serve on the split buns, with lettuce, tomato slices, ketchup, mustard and pickle relish on the side if you like.
