Dereniówka is a Polish dogwood liqueur, a fruit nalewka of the kind served in noble manor houses in 17th century Poland. It uses only dried dogwood fruit, vodka and a small amount of sugar, so the fruit is the main flavor. The method is simple: two weeks of daily shaking, a quick straining, and a few days of rest. It is small-glass sipping, served at room temperature.

Instructions

Put the dried cornus alba fruits in a jar and cover them with vodka of about 45% alcohol. The source gives no volume for the vodka, so use enough to cover the fruit fully.

Leave the jar to macerate for 14 days, shaking it once every day.

When the 14 days are up, strain the liquid and discard the sediment. The alcoholate should look clear of solids.

Stir in the white granulated sugar until it is incorporated.

Let the liqueur rest and clarify for several days, after which it is ready to drink.

Serve it at room temperature in 30 ml glasses.
